A former colony of China, Vietnamese adopted Confucianism, Buddhism, chopsticks and the wok. But in spite of centuries of domination, Vietnamese food retained its own character. Soy sauce rarely appears in Vietnamese dishes it is replaced by what is perhaps the most important ingredient in all of Vietnamese cuisine - fish sauce or nuoc mam.

Unlike Indian or Thai curries, Vietnamese curry is not as thick, it is more like a stew. The emphasis is on the flavoursome curried broth, I tried the chicken curry ¨Cari Ga¨ try this once and you will be wanting more; it is delicious and light, eaten with bread, rice, or rice noodles.

If you like chicken satay then I would also recommend you try Chef Vans, Ga Sate, a mouth-watering twist on the traditional Chinese chicken satay dish. The spring rolls, none of that greasy inner and floppy batter, these were crisp and fresh on the palette, a real gastronomic pleasure.
