Most people will agree when I say the chicken tastes better here in Spain than in England. Although here they probably do have battery farms -most chickens are free range. Where do you find a big chicken? As most of you know they all seem to be the same size. Best to buy one from the butchers counter with all the bits chopped off. We seem to get put off by that plucked strangled head tucked underneath the body when pre-packed, but for the Spanish it is a case of waste not want not - heads & feet go in the stock pot. Chicken Marengo This is a variation of the Italian recipe which I have made my own and like much better.
Chicken breasts 2 tbsp Olive Oil 1 tin tomato passata or frito ½ cup of white wine 1tbls pesto sauce 6 mushrooms 12 black olives ½ red ½green pepper sliced into thin strips ½ onion diced Squeeze of lemon 2 garlic cloves crushed Pinch of salt Sauté the chicken breasts in the oil gently on both sides till nearly cooked. Add onions peppers garlic, once they are soft add tomato, wine pesto, sugar, lemon & olives and allow to simmer under the chicken until completely cooked and pour into a serving dish and garnish with chopped basil.
